I love butternut squash!  It’s a favorite for the fall season.  This vegan butternut squash dish is a great side dish or weeknight dinner.  Mine is on a bed of royal blend rice that I found at my local Weis market but this is delicious at any time of rice or with quinoa if you’re gluten-free too.

A Shortcut: if you don’t want to do fresh

This is a pretty simple recipe once you have prepared and cooked the butternut squash.  If you want to skip the fresh butternut squash there’s a frozen or prepared refrigerated version available this time of year if you look.  

Ingredients

This recipe calls for butternut squash, black beans, grape or cherry tomatoes, sunflower seeds and your choice of grain.  

It is seasoned simply with salt, pepper and garlic powder.  I also use olive oil which isn’t in the picture of ingredients.  

Now you may want to make the butternut squash ahead if you’re going with the fresh squash.  

Preparing Squash

Preparing a butternut squash is similar to pumpkin.  You need to cut the skin off and remove the seeds.  I cut my squash into small cubes so it is easier to cook.  Season with salt, pepper and garlic powder and then olive oiled the pan to bake.

I cooked the squash for 25 minutes at 375 degrees.  While that is baking I made the rice according to the directions on the package.  

Once the squash was cooked.  I then add the tomatoes and black beans to heat them.  I cut my grape tomatoes in half so the wouldn’t squirt everywhere.  That’s my preference and not necessary.  If you don’t cut them it may take a little longer in the oven.  It’s 10 minutes in the oven with the beans and the tomatoes.  

The sunflower seeds go on top after everything comes out of the oven or pot.  Salt to taste and enjoy.
