Cinnamon Raisin Muffins

We love homemade baked goods.  My peanut butter chocolate chip cookies are gone in a couple of days.  Sometimes less.  My mom’s recipes are where I start all of my baked goods.  She is a registered dietitian.  So my brothers and I grew up eating extremely healthy as a result.  Now we haven’t all stuck to her strict diet but there are some things that have never really left.  One of those things is her whole wheat and honey breads. This is my version of one of her recipes.  This is a really yummy and very healthy cinnamon raisin bread or muffin recipe.

Can I just say why is it so expensive to buy cinnamon raisin anything?  We love cinnamon raisin bagels, muffins, and bread.  It was a no-brainer to create a cinnamon raisin recipe.  Here are the ingredients for cinnamon raisin muffins/bread.

Ingredients for Cinnamon Raisin Muffins

Dry Ingredients
1 ½ cups of whole wheat flour
½ cup of rolled oats
¼ cup wheat germ
2 teaspoons baking powder
2 teaspoons cinnamon

Wet Ingredients
1 egg
⅓ cup honey
1 cup milk
½ cup oil
1 cup raisins

Cook time:
17 minutes muffins at 395 degrees or 24 minutes for bread

How to Make Cinnamon Raisin Muffins/Bread

The difference between bread and muffins is only cooking time you can make either with this recipe.  In both cases, you need to preheat your oven to 395 degrees Fahrenheit.

I like to use two separate mixing bowls when making bread.  One for the dry products and one for the wet. Mixing them together first and then with each other.  So you will need two bowls, one larger so you can mix them together later.

Mix your whole wheat flour, oats, wheat germ, baking powder, and cinnamon together.  Make sure you mix it well or you may not get enough rise or the cinnamon taste. (You may add more cinnamon to taste if this isn’t cinnamony enough for you.  I go a little light on the cinnamon due to a picky eater who does like this recipe).

Start with your egg in the wet bowl.  Always start with the egg so you don’t waste your ingredients if you have a bad egg.  Or you don’t crack it well and end up with egg shells. Fish them out before you add anything sticky to the bowl 🙂 .  Then you need your honey, milk, oil, and raisins. You may want to soak the raisins overnight (or even for an hour) if prefer softer raisins.  Mine don’t get soaked.

Muffins or Bread?

Next, pick your pan.  If your making muffins you may want muffin liners or spray oil for your muffin tin.  Or if your going with bread make sure you add enough oil to get the bread out of the pan.

You’ll need to mix your wet and dry ingredients now.  Make sure it’s all the way mixed without any bits of flour left over.  Then add to your choice of pan.

Finally, put your bread or muffins in the oven.  If you are making bread you need to leave it in 24 minutes or until the top is golden brown.  Muffins are 17 minutes.

If you’ve never baked with whole wheat flour before it is darker to start with and you may jump the gun a little early.  Check if it’s done by sticking the bread with a toothpick or butter knife. If it comes out clean then you’re cooked.

There you have it a delicious cinnamon raisin recipe without the cost at the grocery store.  With extremely healthy ingredients.

  7. I love Cinnamon Raisin anything, so this bread and these muffins are something I’d like to make to eat. I only use Whole Wheat flour, so I know the challenges that may arise when baking because it’s harder to cook with then white flour. It’s so hard to find Whole Wheat pastries in the local bakeries, so I have to make a lot of my healthy sweets. Thanks for the recipe!

    • Whole wheat flour is so much better for you then white flour. Most of the whole wheat option around here are only part whole wheat so it’s definitely better to make it yourself.

  8. These sound so good! Except for the raisins lol I’m not a big raisin fan. But I am a HUGE fan of everything homemade! And I agree, why does this particular type of bread cost more? It’s outrageous where I live!

    • If you don’t like the raisins you can add something else instead. Try blueberries, strawberries or peaches. They are all pretty good with this recipe too. I would back off a little on the cinnamon if you pick one of these. 🙂
