My son loves to eat pancakes for breakfast.  I’ve purchased mixes a lot but wanted one that was actually a whole grain and not mostly white flour.  We’ve done some experimenting and this one seems to be the favorite.  So here’s our whole grain pancakes recipe.

This is a toddler approved recipe.  He’s all about his carb-heavy breakfast foods.  He goes for waffles, toast, or waffles with jelly over cereal or eggs.  I like poached eggs with mine and yes a little jelly.

This batch was made plain but you can definitely extras.  You can add ½ a cup of your favorite extras like chocolate chips, strawberries, or bananas to this recipe.  Just remember that if it’s wet you may need to cut back on the milk or if it’s dry you may need to add a little more milk for the right consistency.

Dry Ingredients:

Start with the dry ingredients: flour, oats, wheat germ, baking powder, and cinnamon then mix well.  Check the links if you need anything.  These are the same brands I love and use.  

1 cup of whole wheat flour
½ cup oats
¼ cup wheat germ
2 teaspoons baking powder
½ teaspoon cinnamon

Wet Ingredients:

Then mix your wet ingredients: milk, egg, honey, and oil.  I keep them separate from the dry ingredients until mixed.

1 ⅓ cup milk
1 egg
¼ cup honey
1 tablespoon olive oil 

Mix it Up

Mix all the wet and dry ingredients.  If you’re adding extras mix them in now.  

Cooking

Next we a hot pan.  I keep mine between half and low. Too hot and you burn the pancakes.  I oil in between each set of pancakes.

These are a little thicker pancakes and I reuse the ¼ cup measuring cup to scoop the mix on the pan.

I would have had about medium 9 pancakes from this mix.  But I usually do a mix of medium-size and small pancakes.  So we had 5 medium and 8 small yummy pancakes.
