It’s pumpkin season! And I have a healthy pumpkin recipe for you. We love homemade baked goods. My peanut butter chocolate chip cookies are gone in a couple of days or my cinnamon raisin muffins in a day or two. Sometimes less. My mom’s recipes are where I start all of my baked goods. This is my version of one of her recipes. This is a really yummy and very healthy pumpkin spice muffin recipe.

Ingredients for Pumpkin Spice Muffins

Dry Ingredients

  • 1 ¾ cups of whole wheat flour
  • 2 teaspoons baking powder
  • 1 ½ teaspoons pumpkin spice

Wet Ingredients

  • ½ cup honey
  • 2 egg
  • ½ cup of orange juice
  • ½ cup oil
  • 1 cup pumpkin
  • ½ tablespoon vanilla

Cook time:
17 minutes muffins at 395 degrees or 24 minutes for bread

How to Make Pumpkin Spice Muffins / Bread

The difference between bread and muffins is only cooking time you can make either with this recipe. In both cases, you need to preheat your oven to 395 degrees Fahrenheit.

I like to use two separate mixing bowls when making bread. One for the dry products and one for the wet. Mixing them together first and then with each other. So you will need two bowls, one larger so you can mix them together later.

Mix your whole wheat flour, baking powder, and pumpkin spice together. Make sure you mix it well or you may not get enough rise or the pumpkin spice flavor.

Start with your eggs in the wet bowl. Always start with the eggs so you don’t waste your ingredients if you have a bad egg. Or you don’t crack it well and end up with eggshells. Fish them out before you add anything sticky to the bowl. 🙂 Then you need your honey, orange juice, oil, pumpkin, and vanilla.

Muffins or Bread?

Next, pick your pan. If your making muffins you may want muffin liners or spray oil for your muffin tin. Or if your going with bread make sure you add enough oil to get the bread out of the pan.

You’ll need to mix your wet and dry ingredients now. Make sure it’s all the way mixed without any bits of flour leftover. Then add to your choice of pan.

Finally, put your bread or muffins in the oven. If you are making bread you need to leave it in 24 minutes or until the top is golden brown. Muffins are 17 minutes.

If you’ve never baked with whole wheat flour before it is darker to start with and you may jump the gun a little early. Check if it’s done by sticking the bread with a toothpick or butter knife. If it comes out clean then you’re cooked.
